Smell is the only sense with a direct line to the limbic system — the part of the brain handling emotion and memory — before it's routed anywhere else. That's the biological basis for why a scent can shift your state faster than almost anything else you can put on your body.
Most of what's written about this online overstates the effect of any single ingredient. In practice, only a handful of aroma compounds have real evidence behind them for alertness or calm, and even then the effect is modest and highly individual.
